
it's hot outside! let's have chili!
not the most logical thinking, but so darn good!
this came from ellie krieger's cookbook. very very good. i substituted ground turkey for the ground beef. i figured whatever help i could get in the fat department, the better. this turned out really yummy. i used a little less coriander also, just cause i'm not a huge fan. but i figured there were enough flavors going on, i could overlook it. and yes, cheese and sour cream....a must.
Confetti Chili
1 tbsp olive oil
1 small onion diced
1 medium red bell pepper, seeded and diced
1 medium carrot, diced
2 tsp ground cumin
1 tsp ground coriander
1 lb lean or extra lean ground beef
One 28 oz can no salt added crushed tomatoes, with their juices
2 cups water
1 canned chipotle chile in adobo sauce, seeded and minced, plus 2 tsp of the sauce
1/2 tsp dried oregano
One 15.5 oz can black beans, drained and rinsed
One 15.5 oz can kidney beans, drained and rinsed
1 1/2 cups frozen corn kernels
salt and freshly ground black pepper to taste
Heat the oil in a large pot or dutch oven over medium heat. Add the onion, bell pepper, and carrot, cover, and cook, stirring occasionally, until softened, about 10 minutes. Add the cumin and coriander and cook, stirring, for 1 minute. Add the ground beef; raise the heat to high and cook, breaking up the meat with a spoon, until the meat is no longer pink. Stir in the tomatoes, water, chipotle and adobo sauce, and oregano and bring to a boil. Reduce the heat to medium-low and cook, partially covered, stirring from time to time, for 30 minutes.
Stir in the beans and continue cooking, partially covered, 20 minutes longer, until the chili is nicely thickened. Stir in the corn and cook until heated through. Season with salt and pepper and serve.
One really awesome thing about this cookbook, is that not only does ellie put the nutritional analysis, but she also tells you what each recipe is a good source of (fiber, iron, protein, vitamin a...etc). just alot of really great info!
i've been brainstorming trying to come up with something small i can make for my shop to supplement the gaps between the large pieces. i've got a couple ideas. hopefully i'll get to toy around with them this week. would also like to get some small pieces for the people that don't necessarily want to spend $60 or higher.
i also bought my etsy purchase for this month. yes, i know, i missed buying something last month. i'll just make up for it this month with 2 purchases! oh darn. i'll space them out and buy something next week. can't wait to show off this piece i just bought though. i've been wanting to buy this one since april.
