Puffy Pumpkin Pecan Pancakes

we made a trip to williams sonoma yesterday. willie's parents bought me a gift card there and it was just burning a hole in my pocket! one of the things i bought was their new filled pancake pan. we also got the pumpkin pecan butter and pumpkin waffle mix.
mush all that together and you get pumpkin pecan filled pancakes!!!

oh so good! i still need to work on my technique. it's really hard to flip them with the filling.

I saw that filled pancake pan last week and I really want to get one! But I was a bit skeptical of how it would work. Glad to hear you were successful in making them!

it works great! be sure to fill the center one last because it's the hottest so it cooks the fastest. it just takes some practice. plus, you don't have to make just breakfast pancakes with it. you could do some sort of fish ball (saw those in japan), or some other appetizer type pancake. that was my justification for buying it. :)

Abelskivers. :D It's a Danish custom, these round pancakes. Typically filled with some sort of preserve. Yummy... Traditionally you turn them with knitting needles. :D

thank you! i remember it being something with "skiv" in it. they're addictive little things!
really? with knitting needles? huh.....that would probably be easier than the wooden skewers because the batter kept caking up on them and they were hard to wipe off.
